Monday Marvel #16

So today I thought I'd share one of my new favourite dessert recipes with you. As always it is very easy to make & is super healthy+delicious, although if you want to make it more indulgent you can serve it with ice-cream & chocolate garnishes, as we did.

So here it is, today I bring you the Mango Passionfruit Pot, doesn't it look amazing? We served them in teacups but you can also use small glasses as well.

Click through for the recipe!

-2 large, very ripe mangoes.
-Finely grated zest of 1/2 lime. *If you like you can substitute Lemon rind here.
-250g 0% fat Greek yoghurt.
-2 medium egg whites.
-50g caster sugar.
-3 passion fruits.

1. Peel mangoes & cut flesh from stones. Discard stones. Blend flesh & lime zest until completely smooth. Empty into large bowl & whisk in yoghurt.

2. Put egg whites into a separate large bowl & whisk with clean beaters until stiff but not dry. Gradualy add sugar & continue whisking until thick & glossy. Using a large metal spoon, fold the whites into the mango mixture. Divide among six glasses & chill mousses until needed.

3. Cut passion fruits in half & scrape the pips & juice into a bowl. Top each mousse with a teaspoonful of passionfruit pulp & serve.

*This recipe was printed in Good Housekeeping's August 2011 issue.
